Smoked Corn Relish

This recipe exalts corn and pairs well with vegetables, grilled meats, fish, salads, and everything else you'd want to eat in the summertime!

1 cup smoked corn (cut from about 3 ears)
1 cup fresh corn (blanched and cut from the cob)
1/2 cup cherry tomatoes (halved)
1/2 cup cucumber (peeled, seeded, and sliced into half moons)
1/2 cup diced red bell pepper
1/2 cup sweet onion (minced and marinated in 1/4 cup rice vinegar)
1/4 cup lemon juice
2 Tbsp. honey
2 Tbsp. grated fresh ginger (I use a microplane)
2 tsp. grated garlic (microplane too)
1/4 cup nice olive oil
Generous pinch of salt
Pinch black pepper

Mix everything together and allow the flavors to marry for about an hour before serving alongside fried green tomatoes, grilled meats, and/or fish.
